Lycopene Research
Lycopene is a healthy antioxidant found in red fruits and vegetables like tomatoes and watermelon. It can help protect against cardiovascular disease and some cancers. Lycopene from watermelon continues to be produced after the melon has been picked from the vine. Since refrigeration slows this process, it’s best to store a freshly cut watermelon at room temperature for 7-10 days before cutting. After cutting, however, make sure you refrigerate the melon to keep it fresh. Tomatoes are also a good source of lycopene. The lycopene from tomatoes is enhanced during canning, so using a canning process to put up the extras from your garden may be a good idea.
