My Windowsill Herb Garden, Week 2
Feb 29th
I was so happy to see my plants begin to come to life this week! The first herb to sprout was the Dill. I saw a small growth and within a day it had grown more than an inch!
The second plant to “come to life” was basil. Basil showed a little growth but seems to be a little slower than the dill. The other two plants, oregano and parsley, haven’t shown any signs of life yet, but hopefully that will happen soon!

Creating Your Own Herb Garden…
The first step to creating your own herb gardening is to decide what herbs you’d like to plant. The Mississippi State University Extension Service has a great resource highlighting different herbs and how to use them. Check out the article at this link to help you decide what you’d like to plant in your herb garden. Or, use the link as a way to figure out how to use the dried herbs you already have in your cabinet.
February is National Heart Month – DASH Diet

The DASH Diet (Dietary Approaches to Stop Hypertension) is a heart healthy diet backed by the American Heart Association, the NIH, and other organizations and recommended to help improve blood pressure and heart health. The diet emphasizes fruits and vegetables, low-fat dairy products, whole grain breads, and lean meats while moderating sodium intake.
If you’re trying to improve your heart health, try following the DASH diet yourself! It’s a healthy eating plan and is a healthy eating plan for every member of your family.

Citrus Salsa

This week, I have another recipe I tried out in my temporary little Memphis, TN apartment. I really enjoyed this Citrus Salsa and enjoyed it with some reduced-fat crackers I had. I had to make myself stop or I would have eaten the whole making! It was great!
4 Roma tomatoes
2 large oranges, peeled and diced
1 large Vidalia onion, peeled and chopped
2 jalapeno peppers, seeded and minced
2 tablespoons lemon juice
1/4 cup orange juice
3 teaspoons Splenda
1 tablespoon fresh cilantro
1 teaspoon salt
Bring small saucepan of water to a boil. Blanch tomatoes for 30 seconds, then rinse with cold water. Peel and chop tomatoes.
Place all ingredients in a large bowl and mix thoroughly. Allow to stand at room temperature for 1 hour. Mix and serve. Refrigerate any unused salsa.
Serves 5 – Per serving: 70 calories, 0 grams fat, 2 grams protein, 16 grams carbohydrate, 3 grams fiber

So, get in the kitchen and help mom cook dinner tonight!
Fruit Kabobs

Kids Korner
4-8 inch skewers
Assorted Fruits (strawberries, blueberries, cantaloupe, honey dew, grapes, etc)
Yogurt (fruited or vanilla flavored)
Granola
Line assorted fruits up on skewer in a varied order.
Put some yogurt on a plate and some granola on another. Roll kabob in yogurt first, then in granola.
Repeat with as many kabobs as you’d like to make and enjoy!
Refrigerate leftovers.
