Honey-Garlic Chicken

Published by Ellen Easley at 7:00 am under D. - Main Dishes -, d. Chicken

My family tried this delicious recipe and really enjoyed it. It makes a great one dish meal and has a great flavor.

1 pound boneless skinless chicken breasts, cut into strips
3 cups frozen stir-fry vegetables
1/2 cup fat-free Italian dressing
2 tablespoons honey
4 cloves garlic, minced
1/2 teaspoon ground ginger
3 cups hot cooked long-grain brown rice

Cook chicken in a large skillet sprayed with cooking spray on medium-high heat for 5 minutes, stirring occasionally.
Add vegetables, dressing, honey, garlic, and ginger. Cook and stir an additional 5 minutes, or until chicken is cooked through and vegetables are heated through.
Serve over rice.
