French Toast Casserole

My mom made this wonderful casserole for us to enjoy for breakfast the morning after Christmas when my grandparents were at our house. Hope you enjoy!
1 (10-ounce) loaf sliced French bread or Texas Toast
8 large eggs (or 4 eggs and 8 egg whites)
3 cups milk
6 tablespoons sugar or Splenda
3/4 teaspoon salt
1 teaspoon vanilla
6 tablespoons light butter
Cinnamon to taste
Arrange bread slices in a well-buttered 9 X 13-inch baking dish. Combine the next 5 ingredients in a bowl and mix well. Pour over bread so each slice is saturated. Chill covered for 4 to 36 hours. Prior to baking, dot the bread with margarine and sprinkle with cinnamon to taste. Place dish in cold oven and bake at 350 degrees for 30 minutes.
Serve with light syrup.
Serves: About 24, depending on the serving size
White Chili

Check out this family favorite I made on WCBI TV this morning! White chili is a delicious light feast that my family enjoys.

1/2 cup chopped onion (or 1 small onion)
1 Tbsp olive oil
1 1/2 cup chopped, cooked chicken or 10 ounces canned chicken
1/2 cup chicken broth
2 15-ounce cans Great Northern beans (do NOT drain)
1/2 tsp celery salt
1/2 tsp oregano
1/2 cup salsa
1 1/2 cups shredded low-fat mozzarella cheese
Low-fat sour cream (to garnish)
Low-fat tortilla chips
In 2 qt pot, saute onions in oil until translucent. Add chicken, mixing thoroughly, then add broth. Add beans, celery salt, oregano, and salsa.
Simmer 10 minutes, stirring gently.
Serve with: chips, cheese, sour cream, and green onions (optional)
Wassail

“Every Christmas Day, my family and I have wassail and cinnamon rolls in in the morning while opening gifts. Now recipes for wassail are varied and we do variations on it each year without the alcohol. But the basic recipe that we use is:
Depending on the size of your crockpot:
Half Apple Cider + Half 100% Cranberry juice to fill almost to the top.
Orange slices
Cinnamon sticks
Whole cloves
Whole allspice
(spices are optional and to taste)
(Put Crockpot on high for about 2 hours to heat up, and put on low for rest of the day – the longer it’s simmered/heated the better it tastes)
Obviously it’s a do it your own way type of thing, but it tastes great when you have the apple cider, and 100% cranberry juice. Enjoy

Looking for a unique addition to your table tonight or tomorrow? Try these handy ideas I found…
- Fill a bowl with fruit (apples, oranges, pears, etc)
- Fill a bowl or vase with Christmas balls (either ornaments of the same color or two or more coordinating colors
- Place Christmas ornaments/balls on top of candlesticks of varying heights
- Fill a large vase with Christmas lights, then add potpouri. Turn on the lights to warm the potpouri and create a wonderful smell - NOTE: this project can overheat easily, so don’t leave unattended and do not cover the top of the vase.

Yummy Christmas Treat – Pecan Pie Muffins

A Cooking with Ellen Christmas Splurge
1 cup light brown sugar
1/2 all purpose flour
2 eggs
2/3 real butter, melted
1 cup pecans, chopped
Preheat oven to 350 degrees. Mix all ingredients in a bowl with a wooden spoon. Pour into greased mini-muffin pan, filling each 2/3 full. Bake 12 to 15 minutes.
Yield 2 1/2 to 3 dozen muffins
