It’s Hot – Don’t Forget About Your Food

I often neglect to highlight food safety in my newsletter, but anyone who has gotten sick from food would agree with me that foodborne illnesses are NO FUN!
Here’s what the American Dietetic Association recommends:
“Summer outings or weekends at the beach are great opportunities for a picnic, but before you pack up, make sure you know the basics of food safety.
“Food safety starts with proper food handling. That begins at the time of purchase and continues all the way to storing leftovers. When you get ready for outdoor events, remember the following:
* Wash hands before, during and after handling food. Bring sanitizing gel or towelettes.
* Keep cold foods below 40 degrees Fahrenheit and hot foods above 140 degrees Fahrenheit.
* Store cooked foods separate from raw foods.
* Don’t let perishables such as meat, fish, poultry and dairy foods sit out for more than one hour.
* Transport foods to the grill on one plate and off the grill on another plate.
* Store leftovers in tightly sealed containers.

A New Reason to Shed Pounds in Mid-Life

Extra pounds in the middle of your life can decrease your mobility as a senior. This could fact could provide the encouragement each of us needs to get up, out the door, and to our workouts today!
An article recently published in the USA Today states that “in both men and women, being overweight or obese put them at greater risk of developing mobility limitations in old age, and the longer they had been overweight or obese, the greater the risk.”
Working in a nursing home constantly reminds me of how beneficial it is for our physical well-being to eat healthy, exercise, and live healthy right now. The choices we each make today will affect us tomorrow, whether good or bad.

BLT Turkey Salad

Salad:
Romaine lettuce
Tomatoes
Cheese
Red Onions
Cucumbers
Green Peppers
Bacon (for healthier choice, try Turkey Bacon)
Deli Turkey Slices

Dressing:
1 cup plain low-fat yogurt
1 cup low-fat mayonnaise
1/4 cup sugar or splenda
1/4 cup red wine vinegar
1 teaspoon garlic powder

Assemble salad ingredients in bowls, canning jars, or on plates. Top with dressing as desired.

About this recipe: My future mother-in-law, Mrs. Teresa Wallace, sent me this recipe last summer – but then I let the summer slip away before using it. So, I’ve kept it for you this summer! The presentation on this salad is really fantastic, especially if served in pint or half-pint-sized canning jars. The original recipe was in Taste of Home and it looks so good, especially as fresh summer veggies come in!
