About The Leftover Dessert

I was recently asked to take dessert for dinner at a friend’s house. I had some cupcakes in the freezer that I decided to thaw and ice for dessert. When I pulled the cupcakes out of the freezer, however, I found that they had been smooshed by too much stuff crammed in! uh oh!

But, no fear – my brain quickly got to work and made the dessert below, throwing in the squashed cupcakes, leftover icing, leftover candy bars – OK, well, we did buy the pudding and whipped topping, but the point remains: it was an easy dessert that you are sure to enjoy! This would work perfect for that half of a leftover cake that could sit on your counter for a week while you nibble away – the healthy part, I guess, (besides using sugar-free pudding and fat-free whipped topping) is that you TAKE the dessert somewhere and are not left with the calories at home! Please bear with me on this ‘not as healthy’ recipe!

For lack of a better name, we’ll call it “The Leftover Dessert.”

The Leftover Dessert

1 chocolate cake mix, prepared (or about 18 cupcakes, 1 cake, etc)
1/2 cup whipped chocolate icing (Can use sugar-free, OR, your cake/cupcakes could be pre-iced)
2 candy bars, crumbled (I used Butterfinger – sugar-free Hersheys or Dark Chocolate would work great, too)
1 large box sugar-free instant vanilla pudding, prepared
12 ounces fat-free whipped topping

Break 1/3 of prepared cake into approximately 1 inch cubes in the bottom of a trifle dish or bowl. Top with 1/3 of the chocolate icing. Sprinkle with 1/4 of the crumbled candy bars.

Mix together 8 ounces whipped topping with the pudding and spread 1/2 of that mixture over candy bars.

Continue to layer in this order: Cubed Cake, Icing, Crumbled Candy Bars, Pudding/Whipped Topping, Cubed Cake, Icing, Crumbled Candy Bars – Top with remaining whipped topping. Sprinkle with leftover candy bar pieces to decorate if desired. Refrigerate.

NOTE: This simple recipe can be changed to fit whatever dessert you’re looking for or whatever you have in your home.
Try these combinations:
- Angel Food or White Cake, Vanilla Pudding, Strawberries, Dark Chocolate Candy Bars
- Carrot Cake with Cream Cheese Frosting, Vanilla Pudding
- Chocolate Cake, Chocolate Pudding, Strawberries or Candy Bar

Use whatever you have and have fun with it!

BBQ Chicken Strips

This week, I would like to share yet another chicken strips recipe with you. These BBQ Chicken Strips are absolutely delicious, though they must be eaten with a fork, not your hands. Ryan and I made these for lunch the other day and totally enjoyed every bite! They are very simple with only 2 ingredients, so enjoy!

BBQ Chicken Strips

Chicken Breast – cut into strips
BBQ Sauce – your favorite (we used a Root Beer flavored BBQ sauce I found a coupon for)

Sprinkle BBQ sauce around a medium-sized skillet. Place chicken strips on top of BBQ sauce in one layer. Cover with sauce. Simmer on stove (you may want to cover them, as the BBQ sauce has a tendency to “pop” out) until cooked through (170 degrees). Enjoy while hot.

Online Coupon Clipping

My latest quest/challenge has been to save money at the grocery store. Grocery shopping, especially for healthy foods, can be a huge challenge for most of us on a budget. Calculating price per ounce or price per pound leads me to open my cell phone calculator numerous times throughout the store and checkout time can be a discouraging and shocking ordeal in and of itself. As my quest to save money on groceries continues, I am led to a wonderful resource only the web can bring – online coupon clipping! I recently teamed up with a huge supplier of online coupons and have found online coupon clipping to be especially helpful. I wrote a post about one of my favorite coupon clipping websites on my website and encourage you to visit and print some coupons of your own. Watch for stores that double or even triple coupons and add up the savings. In the past 2 weeks, I’ve saved over $30!

One Shopper Beware: Note that some stores don’t take online coupons due to the risk of fraud – check before you shop!
