I am a registered dietitian from Cedar Bluff, Mississippi. I serve as the clinical dietitian for Winston Medical Center in Louisville, Mississippi, working through Valley Services, inc. I enjoy consulting one-on-one with clients for nutrition education and weight management, public speaking, and managing my website with nutrition information.

I recently completed my dietetic internship (May 2008) through a distance learning program and received my bachelor’s degree from Mississippi State University in May 2007. While in college, I had the opportunity to host “Cooking with Ellen” a healthy cooking segment on our local CBS news station. When I stopped doing the show, I decided to keep up my “Cooking with Ellen” website and begin writing a weekly healthy cooking e-newsletter. I love cooking, learning about nutrition and healthy eating, and sharing my skills with others.

  7. Ellen,

    Hope you can help me. My husband likes a pie crust that gets soggy. I’m not a big pie baker but I would be if I could figure out how to make it soggy and to roll it so it doesn’t get to thin. I can bake cakes and cookies well according to my family. Hope you can give me some tips to help me out.

  8. Well, I think making it soggy is actually easier than not having it soggy! :)

    The thicker the crust, the soggier it’s potential is to be. I would recommend to not cook the crust very long or maybe not at all before filling it (unless you’re making a cream-style pie that doesn’t require much baking. Baking at a lower temperature may help increase the sogginess, too.
