About Ellen

Ellen Easley Wallace, RD, LD
I am a registered dietitian living on campus at Mississippi State University while my husband completes his Mechanical Engineering degree. I serve as a community diabetes educator during the day while enjoying “Cooking with Ellen” on the side. I truly enjoy cooking healthy meals, public speaking and cooking demos, and managing my website with nutrition information.
I completed my dietetic internship (May 2008) through a distance learning program and received my bachelor’s degree from Mississippi State University in May 2007. While in college, I had the opportunity to host “Cooking with Ellen” a healthy cooking segment on our local CBS news station. When I stopped doing the show, I decided to keep up my “Cooking with Ellen” website and begin writing a weekly healthy cooking e-newsletter. I love cooking, learning about nutrition and healthy eating, and sharing my skills with others.

Ellen, heard about your blog at the recent Blog World Conference.
Wondering, can you do a phone interview with us for our audio visual website, Celebrity Chef Connection?
Let me know what you need to know first, and also there’s lots of information on our site, including current a/v segments accessed through our home page and past ones in our Archives.

Ellen,
Hope you can help me. My husband likes a pie crust that gets soggy. I’m not a big pie baker but I would be if I could figure out how to make it soggy and to roll it so it doesn’t get to thin. I can bake cakes and cookies well according to my family. Hope you can give me some tips to help me out.
Thanks

Well, I think making it soggy is actually easier than not having it soggy!
The thicker the crust, the soggier it’s potential is to be. I would recommend to not cook the crust very long or maybe not at all before filling it (unless you’re making a cream-style pie that doesn’t require much baking. Baking at a lower temperature may help increase the sogginess, too.
Here are some tips to avoid a soggy pie crust: http://www.cookingwithellen.com/2008/01/31/what-to-do-about-a-soggy-pie-crust/ – you could just try to do the opposite of the recommendations here!
Thanks,
Ellen
