Ever need buttermilk for a recipe but don’t have any on hand? I sure have run into that situation – I use buttermilk very rarely, so it’s hard to just keep it in stock because it will go bad. Here’s a great substitution I found for buttermilk on About.com.
1 tablespoon white vinegar or lemon juice
Just under 1 cup milk
Pour vinegar or lemon juice into a measuring cup. Add milk to reach 1 cup. Mix and allow to stand for 5 minutes. Use in place of buttermilk in your recipes.
Makes: 1 cup buttermilk substitute
