About Pumpkin Bread Pudding

You may remember me mentioning a few weeks ago that I made a delicious Dinner in a Pumpkin and scooped the rest of the pumpkin out to save. Well, I’ve been putting my extra pumpkin to good use! This past Saturday, a good friend from church was hosting a brunch and I was so excited to go. Since I was out of town most of last week, I searched the refrigerator for what I could take. I decided to use my “leftover” pumpkin from the freezer with my “stale” bread in the refrigerator (had been there since I left!). Just a few more staple ingredients I already had on hand and I could go to the party without going to the store!
Everyone really seemed to enjoy this Pumpkin Bread Pudding recipe at the brunch. I thought it was delicious!

Today, I chose to include a delicious and deceptively healthy treat I recently found. I ran across this recipe while trying to find something to do with my leftover apples from last week’s Praline Apple Bread.
While making this dessert, I was immediately struck by its delicious aroma. I purposefully lifted the lid a few times to simply fill the house with delicious smells. But, the real test is always the taste test – and this recipe certainly passed! It was delicious and no one would have guessed that my treat was so healthy.

This past weekend, my husband and I had the opportunity to go camping with some dear friends at the annual Mississippi Home Educators Association’s Camp Dixon family retreat. I have been going to Camp Dixon for at least 15 years now and was so excited for my husband to be able to experience it this year. I made both of the recipes at left for part of our contribution to the mealtimes.
About Honey Dijon Marinated Pork Loin

I made this delicious pork recipe for Ryan and me the other day. I had about 1 pound of pork left from a demo I did that I had frozen. I used the pork available and made the recipe divided by 1/3. After we enjoyed the pork loin, I marinated some pork chops in the same sauce and cooked them the same way. Both the loin and the chops were absolutely delicious and Ryan is claiming this as a favorite recipe!
