Oatmeal Raisin Cookies

1 stick butter, softened
3/4 cup honey
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 tsp salt
2 cups rolled oats
1 cup raisins

Preheat oven to 375 degrees. In a large bowl, beat butter, honey, and brown sugar until smooth. Beat in egg and vanilla until fluffy. Stir in flour, baking powder, cinnamon, and salt. Gradually add oats and raisins and stir to combine.

Drop by teaspoonfuls onto ungreased cookie sheets. Bake for 8-10 minutes or until golden brown.

Whole Wheat Spice Cookies

In trying to find a healthy “treat” for my husband and me, I ran across a sugar cookie recipe made with whole wheat flour. I made the recipe but decided it needed a little sprucing up. For me, a hearty cookie calls for spicy ingredients. My husband now says they are just about his favorite cookie! We have made them several times and really enjoy them.

1 cup all-purpose flour
1 cup whole wheat flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sugar
1/2 cups Splenda
1/2 cup light butter, softened
1 large egg
1 teaspoon almond extract
Grated Orange Rind (grate the rind from about 1/2 an orange)
1 teaspoon cinnamon

Beat sugar, Splenda, and butter on low speed with an electric mixer until blended. Beat until light and creamy, about 3 minutes, occasionally scraping side of bowl with spatula. Beat in egg and almond extract. Mix in flours, baking powder, salt, orange rind, and cinnamon.

Divide dough in half – flatten each half into a disk, wrap in plastic wrap, and refrigerate 2 hours or until dough is firm enough to roll.

Preheat oven to 375 degrees. Roll dough out on floured surface to about 1/8 inch thick and cut with cookie cutters. Place, 1 inch apart, on ungreased cookie sheets and bake for 10-12 minutes or until lightly browned. Cool on metal racks.

Fudgy Brownies

I made this brownie recipe last night for my family and it was really good. I did not have any plain or vanilla yogurt, so actually used peach. The brownies have a strong chocolaty flavor that is really good and covered up the peach flavor. They are a chewy brownie with alot of yummy flavor!

1 cup sugar
1/2 cup cocoa
6 tablespoons fat-free plain or vanilla yogurt
2 egg whites
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 cup chopped walnuts
Powdered Sugar

In a large bowl, combine the sugar, cocoa and yogurt. Stir in egg whites and vanilla. Gradually stir in flour and nuts just until combined.
Pour into an 8-inch square baking pan that has been coated with cooking spray. Bake at 350 degrees for 25-28 minutes or until a toothpick inserted near the center comes out clean. Dust with confectioners’ sugar.

Yield: 16 servings – Nutrition Info (per serving): 87 calories, 2 grams fat, 2 grams protein, 18 grams carbohydrate

Cookie Roll-Out Delima – New Ways to Use Your Cans

Being a newlywed, I have tons of new cool kitchen utensils and gadgets! On the other hand, however, there are a few key kitchen components that are M. I. A. in my kitchen, thanks to being a new wife. A rolling pin was one of these small holes!

I made the above cookies for my husband, along with pizza crusts, homemade tortillas, etc and constantly ran into a need for a rolling pin. On Saturday, I bought a really cool marble rolling pin very similar to the one to the right but until then I became very creative and found that canned veggies and fruits work really well for rolling out cookie dough, pizza dough, and a host of other kitchen creations! While the cans do get slightly greasy, they work wonders!

Cans of vegetables are also just right for small hands when rolling out dough (you probably have enough cans for everyone to have “their own” can) and are less dangerous for kiddos than a rolling pin as well.
