Crock-Pot Apple Pie

8 Granny Smith Apples, thinly sliced
1 1/4 teaspoon ground cinnamon
1/4 teaspoon allspice
1/4 teaspoon nutmeg
3/4 cup fat-free milk
2 tablespoons light butter, softened
3/4 cup sugar
2 eggs
2 teaspoons vanilla
1 1/2 cups Bisquick, divided
1/3 cup brown sugar
3 tablespoons cold butter

Lightly grease slow cooker. In the slow cooker, toss apples with cinnamon, allspice, and nutmeg.

In a separate bowl, combine milk, softened butter, sugar, eggs, vanilla, and 1/2 cup of the Bisquick. Spoon over apples.

Combine the remaining Bisquick with the brown sugar. Cut cold butter into Bisquick mixture until crumbly. Sprinkle this mixture on top.

Cover and cook on low 6 to 7 hours or until apples are soft.

Serves 4.

Kids Korner – Stuffed Apples

1 apple (I prefer granny smith, but it tastes great with any variety)
2 1/2 teaspoons sunflower seeds
1/2 teaspoon flax seeds (optional)
2 Tablespoons raisins
dusting of ground cinnamon (to taste)
1 Tablespoon orange juice concentrate (thawed)
Peanut butter (to coat)

1). Wash the apple. With a sharp paring knife, cut the top off horizontally (so that it makes a lid). Hollow out the apple, and keep all pieces that do not have core or seeds.

2). Cut into small pieces all of the usable apple pieces from the hollowing. Put them into a small bowl.

3). Mix in the sunflower seeds, flax seeds, and raisins. Dust with cinnamon to taste (don’t worry about using up too much of your filling, it probably won’t all fit back into your apple anyway). Add the orange juice concentrate, mix well, and then set the filling mixture aside.

4). Return to your hollowed apple and coat the inside walls and bottom with peanut butter. Spread some peanut butter over the inside of the “lid” as well.

5). Stuff the apple with the filling mixture, then cover with the lid.

6). You can either eat your stuffed apple right away or stick it in an airtight container or baggy and eat it later in the day. It does not require refrigeration if eaten within 12 hours. These would probably also be delicious baked, but personally I love them raw.

Pineapple Orange Cake

Rarely do I share a recipe that either I have not tried or a trusted friend has not recommended, but this week I could not resist sharing this delicious-sounding recipe from Taste of Home. This light dessert sounds just perfect for a spring meal. Hope you enjoy!

1 package (18-1/4 ounces) yellow cake mix
1 can (11 ounces) mandarin oranges, undrained
4 egg whites
1/2 cup unsweetened applesauce

TOPPING:
1 can (20 ounces) crushed pineapple, undrained
1 package (1 ounce) sugar-free instant vanilla pudding mix
1 carton (8 ounces) reduced-fat whipped topping

In a large bowl, beat the cake mix, oranges, egg whites and applesauce on low speed for 2 minutes. Pour into a 13-in. x 9-in. baking dish coated with cooking spray.

Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

In a bowl, combine the pineapple and pudding mix. Fold in whipped topping just until blended. Spread over cake. Refrigerate for at least 1 hour before serving.

Yield: 15 servings – Nutrition Info (per serving): 231 calories, 5 grams fat, 43 grams carbohydrate, 1 gram fiber, 310 mg sodium, 3 grams protein

Chocolate Covered Strawberries

You Will Need:
1 pkg dipping chocolate or chocolate chips
1 container strawberries
Waxed paper
Cookie sheet
Glass bowl
Rubber spatula
Microwave

Directions:
Wash strawberries (leave stems on) & dry VERY well. Don’t let any water stay on the strawberry, or the chocolate won’t stick. Cover a cookie sheet with waxed paper.

Microwave chocolate in a glass bowl on high for 30 seconds. Remove from microwave & stir for a second or two with a rubber spatula. Repeat the above step one or two more times. By the third time, you should see some of the chocolate beginning to melt (sort of like lumpy chocolate soup). Remove at this point & stir until the lumps are gone.

Dip the dry strawberries into the chocolate, swirling them around to coat well & then place on the waxed paper. When you’ve coated all the strawberries, set aside for about 2 hours to let the chocolate harden.

Apple Dumplings

Today’s recipe is another favorite from Mr. Charles Weatherly. These Apple Dumplings sound like a wonderful dessert to your Christmas dinner, or sound like a wonderful Christmas breakfast tradition!
4 Granny Smith Apples, peeled, cut into sections
4 cans (of 6) crescent rolls
2 tablespoons cinnamon powder
1 pound butter
4 cups Sprite
4 cups sugar
Optional: 2 teaspoons each: Nutmeg, Cloves just before adding sugar and Sprite.

Slice the apple sections into small pieces. Roll out the rolls and place several pieces of apple on each one. Place a bit of butter on it and sprinkle liberally with cinnamon. Fold up the roll into a dumpling. Continue until all 24 dumplings are made. In the meantime, melt the butter in a large stainless pan. Place dumplings in butter. Coat with the sugar.

Pour the Sprite all over the dumplings which will dissolve the sugar into the dumplings and butter. Cook, uncovered, in preheated oven at 325 degrees for about 30 minutes or until browned. Cover with foil and cook for another 30 minutes until done.

Yield – 24 Apple Dumplings.
