Ryan & Ellen’s Famous Chili

1 1/2 pounds beef

1 onion

2 (28-ounce) cans tomatoes

1 (8-ounce) cans tomato sauce

1 (4-ounce) can chopped green chilies

1/4 teaspoon Tabasco sauce

1 chopped jalapeno pepper

1 teaspoon chili powder

1 teaspoon oregano

1 teaspoon garlic salt

1 teaspoon basil

1/2 teaspoon black pepper

1/8 teaspoon Cayenne pepper

Brown beef in skillet with onion. Drain and rinse beef with hot water. In medium saucepan, mix together all ingredients. Simmer on low-medium heat for 1 hour before serving.

Thanksgiving Turkey

I asked my mom to share her Thanksgiving Turkey recipe with me – it is always so good and moist! Enjoy!

“For turkey, I make sure it is thawed well. Then I rinse it and make sure it is clean. I season it on the outside with lemon pepper, seasoning salt, and garlic. I go by the info on my smoker according to how many pounds it is for the time it will take, but it is usually about 8-9 hours. Ours is a water smoker. My dad always told me if you are smoking chicken or turkey, you put a sweet type juice or fruit in the water, and if it is beef or pork, go with onions and flavors that are strong like that. There is also a small pan in the very bottom that you can put some wood chips in to increase the smoke flavor. It is best if you presoak the wood chips. Helps them smoke that much more. For turkey, I usually use any juice that I have drained from any cans of fruit over the last while. I’ll freeze the juice as I drain it and have it ready for smoking. You need to use boiling water before adding the juice. Then I take 2-3 apples and cut them in big chunks and put them in the water/juice mixture also. I also like to put in a few tablespoons of Liquid Smoke. Smoking the turkey helps to keep it moist and delicious.”

Upside Down Pizza

1/2 pound ground meat (beef, turkey, Italian sausage, or turkey sausage) or pepperoni
1 cup spaghetti sauce
1 cup vegetables (i.e. sliced mushrooms, green pepper strips, chopped onions, black olives, etc)
1+ cup mozzarella cheese, divided
1 cup baking mix (i.e. Bisquick, Pioneer, etc)
1 egg
1/2 cup milk

Spray 8-inch square baking dish with cooking spray. Put spaghetti sauce in bottom of dish. Top with veggies, meat, and half the cheese.

Mix together baking mix, egg, and milk until blended and pour over meat and vegetables. Sprinkle with remaining cheese.

Bake, uncovered, at 375 degrees for 25-30 minutes or until golden brown. Serves 4.

NOTE: Can easily double recipe and fix in 9X13-inch baking dish.

Stuffed Potato Bar

I get this secret (well, I guess it won’t be a secret anymore!) enjoyment out of placing a delicious, large meal on the table at night in front of my husband while he and I both know I haven’t spent much time preparing the meal! Take last night – I made what is described below – I threw the potatoes in the oven, went to the store with my husband, came home, and by the time he had unloaded the groceries dinner was ready! Voila! I felt special and he got a delicious, hot meal!

The great thing about a potato bar is that you have a fix-it-yourself one dish meal. Everyone puts whatever they want on their potato. Potatoes are starches, so be sure to include some high protein foods to balance your meal out.

Stuffed Potato Bar

- Baked Potatoes (I get whatever is on sale – red, white, golden, etc)
- Toppings (mix and match whatever is in your refrigerator):
Cheese
Lite Sour Cream
Turkey Pepperoni
Taco Meat (beef, chicken, or turkey)
Bell Peppers (sauteed)
Onions (sauteed)
Mushrooms (sauteed)
Broccoli (steamed)
Canned or cooked black beans, pinto beans, corn (for Mexican-style potatoes)
Salsa
ETC!!!

Place all ingredients on counter or table Open baked potato and top as desired.

Have fun using up stuff in your pantry!

Honey Dijon Marinated Pork Loin

3 pounds pork tenderloin
3 cloves garlic, minced
1 small onion, minced
2 tablespoons dried parsley
3 tablespoons dijon mustard
1/4 cup plain low-fat yogurt
2 tablespoons extra virgin olive oil
2 teaspoons salt
1 teaspoon black pepper
3-4 drops Tabasco sauce
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/3 cup white wine or white cooking wine (optional)

Preheat oven to 350 degrees. Grease the smallest baking dish available that is large enough to fit your pork loin.

Place whole pork tenderloin in baking dish. In a separate bowl, mix together the rest of the ingredients. Pour over pork, cover, and bake at 350 degrees for 1 1/2 hours or until internal temperature reaches 170 degrees.

When done, remove tenderloin from dish, place on a cutting board, cover with aluminum foil, and allow to sit for about 20 minutes. Slice tenderloin, using juice in pan for sauce.
