Ryan & Ellen’s Famous Chili

1 1/2 pounds beef
1 onion
2 (28-ounce) cans tomatoes
1 (8-ounce) cans tomato sauce
1 (4-ounce) can chopped green chilies
1/4 teaspoon Tabasco sauce
1 chopped jalapeno pepper
1 teaspoon chili powder
1 teaspoon oregano
1 teaspoon garlic salt
1 teaspoon basil
1/2 teaspoon black pepper
1/8 teaspoon Cayenne pepper
Brown beef in skillet with onion. Drain and rinse beef with hot water. In medium saucepan, mix together all ingredients. Simmer on low-medium heat for 1 hour before serving.
Upside Down Pizza

1/2 pound ground meat (beef, turkey, Italian sausage, or turkey sausage) or pepperoni
1 cup spaghetti sauce
1 cup vegetables (i.e. sliced mushrooms, green pepper strips, chopped onions, black olives, etc)
1+ cup mozzarella cheese, divided
1 cup baking mix (i.e. Bisquick, Pioneer, etc)
1 egg
1/2 cup milk
Spray 8-inch square baking dish with cooking spray. Put spaghetti sauce in bottom of dish. Top with veggies, meat, and half the cheese.
Mix together baking mix, egg, and milk until blended and pour over meat and vegetables. Sprinkle with remaining cheese.
Bake, uncovered, at 375 degrees for 25-30 minutes or until golden brown. Serves 4.
NOTE: Can easily double recipe and fix in 9X13-inch baking dish.

For the main dish, enjoy this cake – well, actually it’s a meatloaf “cake” and the “icing” is mashed potatoes! Surprise your family with “dessert first!”
Then, when it’s time for dessert, pull out this pizza – well, actually it’s a cake decorated to look like a pizza!
Football Meatloaf

Today I would like to share a prize-winning meatloaf recipe with you. This meatloaf won first place in the “Most Original” category at the 1994 Wild Side of the Menu Cooking with Game competition, sponsored by the Oktibbeha County Extension Service. I entered this meatloaf recipe after making it into an oval, topping with pimentos, and placing on a bed of spinach as described below, but feel free to create your meatloaf in a bread pan and slice to serve. For all of you interested, I turned 9 years old at the very end of 1994, making me one of the very youngest chefs at the cookoff! I felt very rich with my prize of $25!
2 ½ pounds ground deer (we use very lean)
1 egg
½ cup milk
¾ cup quick cooking oatmeal
3 teaspoons salt
1 teaspoon Dale’s steak seasoning
3 tablespoons chopped onion
2 teaspoons horseradish
Mix all ingredients together. Shape into an oval (football-shaped) loaf (9X5X3 inches) and place on a greased baking sheet. Bake at 350 degrees for 1 hour and 30 minutes.
Use pimento strips to make laces on football. Serve on a bed of prepared spinach (this makes the football turf!).
Note: You could easily use the same recipe and place it in a greased loaf pan, bake, slice, and serve. You could also make the meatloaf into individual meat patties to serve with sides.
