Wild Rice & Cranberry Salad

1 pkg long grain and wild rice (Uncle Ben’s is good)
1 cup dried cranberries
1 cup broccoli flowerettes, chopped
4 green onions, chopped
3 celery ribs, thinly sliced
1 2-oz. jar pimento
1 cup dry roasted peanuts

Prepare rice according to directions, cool completely. Combine rice and next 5 ingredients. Add dressing and chill at least 2 hours. Mix in peanuts just before serving.

SWEET AND SOUR DRESSING

1/3 cup sugar
2-1/2 Tbsp vinegar
1/8 tsp pepper
1/4 tsp garlic powder
1/2 cup vegetable oil (I use less about 1/3 cup)

Mix all in a jar and shake, pour over rice mixture.

I get frequently confused when people start distinguishing between different fruit salads – what goes in a Waldorf, Ambrosia, Hawaiian, or Sunshine salad? I can’t seem to keep each one straight.

BLT Turkey Salad

Salad:
Romaine lettuce
Tomatoes
Cheese
Red Onions
Cucumbers
Green Peppers
Bacon (for healthier choice, try Turkey Bacon)
Deli Turkey Slices

Dressing:
1 cup plain low-fat yogurt
1 cup low-fat mayonnaise
1/4 cup sugar or splenda
1/4 cup red wine vinegar
1 teaspoon garlic powder

Assemble salad ingredients in bowls, canning jars, or on plates. Top with dressing as desired.

About this recipe: My future mother-in-law, Mrs. Teresa Wallace, sent me this recipe last summer – but then I let the summer slip away before using it. So, I’ve kept it for you this summer! The presentation on this salad is really fantastic, especially if served in pint or half-pint-sized canning jars. The original recipe was in Taste of Home and it looks so good, especially as fresh summer veggies come in!

Kumback Salad Dressing

This salad dressing recipe has been a favorite of my family for years. My mom has made it the regular version (with regular mayonnaise) and we have also made it this low-fat version. The dressing works well for salads, dip for shrimp or veggies, etc. It’s similar to a tangy style Thousand Island.

2 teaspoons garlic juice (or 1 teaspoon garlic powder)
2 tablespoons onion juice (or 1 tablespoon onion powder)
2 cups low-fat or fat-free mayonnaise
1/4 cup chili sauce
1 teaspoon black pepper
1/4 cup oil
1 tablespoon lemon juice
1 teaspoon mustard
Dash of paprika
Dash of Tabasco hot sauce

Combine all ingredients in a quart jar. Shake and chill in refrigerator. Make sure that your quart jar is fully sealed before shaking!
