Chocolate Covered Strawberries
Feb 5th
You Will Need:
1 pkg dipping chocolate or chocolate chips
1 container strawberries
Waxed paper
Cookie sheet
Glass bowl
Rubber spatula
Microwave
Directions:
Wash strawberries (leave stems on) & dry VERY well. Don’t let any water stay on the strawberry, or the chocolate won’t stick. Cover a cookie sheet with waxed paper.
Microwave chocolate in a glass bowl on high for 30 seconds. Remove from microwave & stir for a second or two with a rubber spatula. Repeat the above step one or two more times. By the third time, you should see some of the chocolate beginning to melt (sort of like lumpy chocolate soup). Remove at this point & stir until the lumps are gone.
Dip the dry strawberries into the chocolate, swirling them around to coat well & then place on the waxed paper. When you’ve coated all the strawberries, set aside for about 2 hours to let the chocolate harden.

Pineapple Souffle

My grandmother makes the best pineapple souffle recipe! While I enjoy eating it on special occassions, I don’t make it very often because of the high sugar and calories. So, here’s what I’ve found to be a “better” version that’s a little healthier but still very good:
4 cups bread, pinched in bits (we use whatever buns, bread, etc we have)
1/2 cup sugar
1/2 cup Splenda
1 (20 ounce) can crushed pineapple – save the juice
1 stick light butter, melted
2 eggs + 2 egg whites
Place bread pieces in a 2 quart baking dish. Drain pineapple, saving liquid, & toss pineapple with bread. Mix together eggs, sugar, light butter, & 1/2 cup pineapple juice. Pour over bread crumbs, pushing the bread down to make sure it is covered with the mixture, but do not stir.
Bake, uncovered, at 350 degrees for 30 minutes or until lightly browned.
Mom’s Fruit Salad
May 29th
1 can peach pie filling
1 can pineapple chunks, drained
1 can mandarin oranges, drained
1 pint strawberries, sliced
2 bananas, sliced
Mix all ingredients together and chill.
Apple Casserole
May 29th
1 ½ cups brown sugar
¾ cup butter
3 tablespoons corn syrup
3 apples, peeled, cored, and diced
7 eggs
2 ¼ cups milk
1 ½ teaspoon vanilla
8 slices bread
Quarter pieces of bread and arrange in greased 13” X 9” baking dish. Top with apple pieces.
Mix together brown sugar, butter, and corn syrup. Pour over bread and apples.
Beat the eggs, milk, and vanilla. Pour over everything.
Bake at 350 degrees for 40-50 minutes.
Note: Works well to make the night before, refrigerate, and bake the morning of.
Orange Salad

This is a favorite of my family’s during Easter and other special holidays. Making it with sugar-free gelatin cuts out alot of calories and using lite or fat free cool whip and cottage cheese makes it low fat!
Orange Salad
8 oz Lite Cool Whip, thawed
1 small box Sugar free Orange Jello
1 can (10 oz) Mandarin Oranges in Juice, drained
1 can (8 oz) Crushed Pineapple, drained
1 cup Low-fat Cottage Cheese
½ cup chopped Pecans
Dissolve Jello in Cool Whip. Mix in other ingredients and refrigerate overnight to set.
