Citrus Chicken Bake

Last Thursday, I had opportunity to do a healthy cooking presentation for our local homeschool moms. The presentation focused on Healthy Meals for Busy Moms on a Budget. I had a powerpoint presentation and also a cooking demo and tasting for everyone – welcome to all the moms who just joined the newsletter list!

I made the below Citrus Salsa at the demo and the idea was presented that this would be a delicious salsa to use with fish. I didn’t have any fish (though I think that sounds very tasty) but I did have some chicken. So, here’s what I did with my Citrus Salsa:

Citrus Salsa

4 Roma tomatoes
2 large oranges, peeled and diced
1 large Vidalia onion, peeled and chopped
2 jalapeno peppers, seeded and minced
2 tablespoons lemon juice
1/4 cup orange juice
3 teaspoons Splenda
1 tablespoon fresh cilantro
1 teaspoon salt

Bring small saucepan of water to a boil. Blanch tomatoes for 30 seconds, then rinse with cold water. Peel and chop tomatoes.
Place all ingredients in a large bowl and mix thoroughly. Allow to stand at room temperature for 1 hour. Mix and serve. Refrigerate any unused salsa.

Citrus Chicken Bake

Place 6 chicken breasts into greased baking dish. Top with Citrus Salsa.

Cover and bake for about 20 minutes. Uncover and bake until chicken reaches an internal temperature of 170 degrees, about 20-30 more minutes, depending on the size of your chicken breasts.
