Gluten Free Cream of Chicken Soup

Gluten Free Cream of Chicken Soup

1 1/2 cups chicken broth
1/2 tsp. poultry seasoning (gluten free)
1/4 tsp. onion powder (or diced onions)
1/4 tsp. garlic powder (or minced garlic)
1/8 tsp. black pepper
1/4 tsp. salt
1/4 tsp. parsley
dash of paprika
1 1/2 cups milk (or milk substitute if casein free)
3/4 cup gluten free flour blend (I use rice flour or corn starch)

In medium size saucepan, boil chicken broth, 1/2 cup milk, and seasonings for a minute or two.  (Longer if using fresh onions and garlic)

In a bowl whisk together the remaining 1 cup of milk and flour.  Add to boiling mixture and continue whisking briskly until mixture boils and thickens.  You can add bits of chicken if desired.  It takes about a cup (more or less) to equal a can of cream of chicken.  It can also be frozen.
