Panini Bar

Last Wednesday was our church’s ladies meeting and I prepared the menu. I decided to go with a Panini Bar for the menu and asked each lady to bring a different item to go on or with our Paninis. The bar was a success and our Paninis were delicious. Here’s what we did:

I asked the ladies to each sign up for something from the following:
– Bread (we had Ciabatta, but French, Sourdough, Rye, Baguette, Pita, Whole Wheat, etc will all work just fine), sliced about 1/2 inch thick
– Meat (Roast Beef, Turkey, Chicken, etc)
– Cheese (all varieties)
– Vegetables (bell pepper, lettuce, tomato, spinach, onion, avocado, etc)
– Fruits (Pineapple, etc)
– Sauces – I made these, here are my recipes:

Honey Dijon Sauce
1/4 cup honey
1/4 cup Dijon mustard
Mix together thoroughly and chill until ready to use.

Greek Sauce
1 cup lite sour cream
3 artichoke hearts, chopped finely
1/3 cup parmesan cheese
1 teaspoon garlic powder
Mix together. Chill until ready to use.

To create your Panini:
Choose your bread and top with the sauce of your choice (could also use mayonnaise, Ranch, etc). Top with meats, cheeses, and vegetables of your choice.

Place Panini onto your grill press and cook until the cheese is melted and sandwich is hot throughout. Your grill could be a George Forman style indoor grill with a Panini or “Baking Sheet” plate such as mine. Or, you can use a griddle or skillet and use an iron skillet to hold your panini in place (if you use a skillet you may need to flip your sandwich over midway to cook both sides).

2 slices bread
Chicken
Cheese
Vegetables
Ranch Salad Dressing

Hawaiian Chicken Panini
2 slices bread
Chicken
Cheese
Pineapple Slices
Veggies
Honey Dijon Sauce

Perfect Grilled Cheese
2 slices bread
2 slices cheese
Brush bread with olive oil or butter
Optional: Honey Dijon or Greek Sauce
