Boil sweet potatoes until tender. Drain. While still hot, add butter and mash with vegetable masher (or electric mixer). When smooth, add Splenda blend and cinnamon.
Serve hot as a side dish.
– Cook sweet potatoes whole instead of boiling. Cut in ½ lengthwise and scoop out insides. Make mashed sweet potatoes recipe and “restuff” potato shell. Sprinkle with nuts and bake in casserole dish for about 20-30 minutes.
– To serve: serve in bowl like mashed potatoes, or put in casserole dish, top with chopped pecans, bake for about 20-30 minutes, and serve like a sweet potato casserole.
