3 large sweet potatoes, peeled and cubed
2 teaspoons cinnamon
1 teaspoon nutmeg
¼ cup brown sugar
½ stick light butter
Boil sweet potatoes. When potatoes are soft enough to pierce with a fork, drain and place in the bowl of an electric mixer. Add other ingredients and beat on medium-high until smooth. Place in greased baking dish and top with chopped nuts, marshmallows, brown sugar, or other topping of choice. Bake 10 minutes to brown the top. To make the day before your holiday, simply cover finished potatoes with aluminum foil and refrigerate. Heat at 350 degrees until warm when ready to enjoy.
