Peanut Butter & Pretzel Truffles

1/2 cup crunchy peanut butter
1/4 cup finely chopped pretzels
1/2 cup milk chocolate chips

Combine peanut butter and pretzels in a small bowl. Chill in freezer for about 15 minutes. Remove from refrigerator and shape into balls (about 1 teaspoon each) – I used my cookie scoop to make the balls. Place balls onto waxed paper and freeze for an hour or until very firm.

Melt chocolate chips in the microwave, stirring every 20-30 seconds. Roll peanut butter/pretzel balls in chocolate. Place in mini muffin cups. Refrigerate until set, about 30 minutes.
