30-Minute Almond Chicken

8 boneless, skinless chicken thighs (or breasts, for a lighter dish)
1/4 cup fat-free Zesty Italian dressing
1 cup low-sodium, fat-free chicken broth
2 cups green beans, trimmed, halved
1 cup instant rice, uncooked (brown rice provides more health benefits and fiber)
1/4 cup sliced almonds

Toss chicken and dressing in a resealable plastic bag. Place chicken in a large nonstick skillet and cook on medium-high heat for about 4 minutes per side or until browned (may need to cook a little longer if using thicker meat such as chicken breasts).

Stir in broth; bring to a boil. Cover. Simmer 10 minutes. Add green beans; cook 5 minutes or until chicken is cooked through.

Remove chicken from skillet. Add rice and almonds. Remove from heat; cover. Let stand 5 minutes. Serve chicken over rice mixture.
