About Eggplant Lasagna

While at the grocery store last week, I was met by a familiar friend in the vegetable aisle: The Eggplant. While it has been awhile since I have bought or cooked with eggplants, I have had a taste for eggplant lasagna, a dish I remember my mother making years ago, for a couple of weeks now.

So, I bought the eggplant, brought it home, and made a feast for my husband who at first wasn’t quite sure whether or not he would like it. I asked Ryan to please just try one bite and told him that I would promise to cook him up something else if he didn’t like my lasagna. He tried it, loved it, and we both cannot wait to eat the leftovers again this week.

(I know you are all wondering … yes, I have burnt food since June 20th – namely granola – but it was not burnt passed the enjoyable state, so that’s good. I also undercooked some chicken one time that I thought was precooked but wasn’t, so we had to micro that.)
