I was recently asked to take dessert for dinner at a friend’s house. I had some cupcakes in the freezer that I decided to thaw and ice for dessert. When I pulled the cupcakes out of the freezer, however, I found that they had been smooshed by too much stuff crammed in! uh oh!
But, no fear – my brain quickly got to work and made the dessert below, throwing in the squashed cupcakes, leftover icing, leftover candy bars – OK, well, we did buy the pudding and whipped topping, but the point remains: it was an easy dessert that you are sure to enjoy! This would work perfect for that half of a leftover cake that could sit on your counter for a week while you nibble away – the healthy part, I guess, (besides using sugar-free pudding and fat-free whipped topping) is that you TAKE the dessert somewhere and are not left with the calories at home! Please bear with me on this ‘not as healthy’ recipe!
For lack of a better name, we’ll call it “The Leftover Dessert.”
