This past week, Ryan and I enjoyed having dinner with some good friends and I made these Potato Chips. We really enjoyed both the flavor and texture of the chips and the fact that they had “healthy” fats on them!
4 medium potatoes, sliced in 1/8 inch thick rounds
2 tablespoons olive oil
1 teaspoon black pepper
1 teaspoon salt
Preheat oven to 450 degrees. Toss potatoes, oil, and pepper in a large bowl. Spread potatoes into one layer on greased baking sheets. Bake for 20-25 minutes or until chips are crisp and lightly browned.
Remove from oven, season with salt, and allow to cool.
