Banana Bread

2 ½ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
½ cup applesauce
1 cup sugar
3 egg whites (or 1 egg + 1 egg white)
4 very ripe bananas (peel & mash) = 2 cups
1 teaspoon vanilla extract

Preheat oven to 350 degrees (375-400 degrees for muffins). Spray a 9X5X4 inch loaf pan or muffin pans with nonstick cooking spray. Combine dry ingredients and set aside. In a larger bowl, whisk together applesauce, sugar, egg whites, banana, and vanilla. Add flour mixture all at once and stir gently to blend (do not use a mixer or over-stir because bread will be too tough). Pour batter into pans. Loafs with bake 50-60 minutes or until a knife inserted in center comes out clean. Bake muffins until golden. Cool bread completely before slicing. Makes 18-20 muffins.

Note: Original recipe calls for 3 bananas to make 2 cups, but you normally need 4 bananas to make 2 cups. You can use 3 or 4 bananas. With 4 bananas, you get approximately 18 muffins (141 calories, 0 grams fat per muffin).
To reduce the calories even further, use ½ sugar and ½ splenda; you can also use ½ cup oatmeal for ½ cup of the flour – adds soluble flour and decreases calories.
