Our family enjoyed this delicious pizza dish the other night and it tasted wonderful. It’s rather low-fat and can be made with either a store-bought pizza crust or the pizza crust from my website. Enjoy!
1 can chunk chicken, drained, (10-14 oz.)
1/2 red onion, sliced in strips
1 tablespoon Extra Virgin Olive Oil
3/4 c. barbeque sauce
3/4 + 1 cup shredded Pepper Jack cheese
1 (12 inch) pizza crust
In large skillet, saute’ onion slices in olive oil until caramelized. Spread barbeque sauce on pizza crust. Top with chicken. Sprinkle with cheese and caramelized onions. Bake at 450° for 12-15 minutes, or until heated through and cheese has melted.
