I don’t often eat vegetarian dinners (my hubby likes meat! 🙂 but this past week we had an amazing treat. I had some black beans so thought I’d make these burgers. They were absolutely delicious! We ate these burgers with some homemade buns for an awesome supper.
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
2 cups black beans (drained and rinsed if from a can)
1/2 cup bread crumbs
2 teaspoons cumin
Salt & Pepper to taste
In a skillet, saute onion and garlic in oil until onions are translucent.
Mash black beans with a potato masher until smooth. Mix vegetables with black beans. Add other ingredients and mix well.
Shape black bean mixture into 4 burgers. Place in medium-size skillet. Cook on medium heat until burgers are cooked all the way through, about 10 minutes per side.
Enjoy with buns just like you would a regular burger!
