Blackened Salmon with Creole Sauce

Omega-3 fats, found in fish, are healthy and can protect your heart against heart disease. Salmon is rich in Omega-3 fats and is a healthy edition to your next dinner menu.

4 salmon fillets, skin removed
Nonstick cooking spray, butter flavor
Blackening seasoning (use your favorite variety – If you’re watching your salt intake, make sure you choose a seasoning low in sodium)
1/2 cup ketchup
1 tablespoon fat-free mayonnaise
1 tablespoon mustard
2 tablespoons white cooking wine
Cayenne pepper to taste

Preheat oven to 400 degrees. Spray both sides of filet with butter-flavored spray. Pat seasoning onto both sides with hands. Place in a metal baking dish and bake at 400 degrees for 5-10 minutes per side.
Make creole sauce by whisking together ketchup, mayonnaise, mustard, cooking wine, and cayenne pepper.
Serve creole sauce over blackened salmon.
