Blueberry Muffins

I’ve experimented with muffins several times and this is a recipe I “designed” that’s healthy and it tastes good too. The cereal and wheat germ add fiber and the olive oil provides a good source of fat. You can also add 1/2 cup chopped nuts.1 cup Special K cereal – crush to 1/2 cup
1/2 cup wheat germ
1 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup Splenda
1 cup low-fat milk
2 egg whites
1/4 stick lite butter, melted
2 tablespoons olive oil
1 cup fresh or frozen blueberries

Mix together cereal, wheat germ, flour, baking powder, salt, and splenda. In a separate bowl, mix together milk, egg whites, butter, and oil. Mix wet ingredients into dry ingredients. Add blueberries, mixing until well combined but no more than necessary. Separate into 12 muffin cups and bake at 350 degrees for about 15 minutes. Enjoy!
