Breakfast Casserole

6 slices lite wheat bread
1 cup chopped ham
1/4 cup diced bell pepper
1/4 cup diced onions
1 1/2 cups reduced fat cheddar cheese
4 eggs
2 cups reduced-fat milk
1/2 tsp dry mustard
1 tsp salt
1/2 tsp pepper

Layer 1st 5 ingredients in order given in a greased 9″X13″ pan.

Mix together next 5 ingredients in a bowl. Pour over ingredients in pan.

Cover and refrigerate overnight. The next morning, bake at 350 degrees for 35-45 minutes, or until set.
