Carolyn Bailey’s Great Granola Bars

While working with my primary preceptor, Mrs. Carolyn Bailey, RD, she shared a wonderful recipe for granola bars with me. Enjoy!

2 ½ cups Kashi cereal
1 ½ cups oats (quick or old-fashioned)
½ cup golden raisins
½ cup lightly salted peanuts
½ cup packed brown sugar
½ cup light corn syrup
½ cup creamy peanut butter
½ cup golden flaxseeds
1 teaspoon vanilla extract

Grease a 9 X 13 inch baking dish with cooking spray. In a large bowl, stir together the cereal and oats. Set aside.
Combine the brown sugar and corn syrup in a small saucepan over medium heat. Heat just until boiling, then remove from heat and stir in peanut butter, vanilla, and flaxseeds until smooth. Pour over the cereal and oat mixture and mix well.
Press into prepared pan using the back of a large spoon or spatula. Allow to cool, then cut into 18 squares.
