As I mentioned a few weeks ago, Ryan and I have been doing the Insanity fitness program. We have not only enjoyed the DVD workouts provided by it but are also enjoying the included meal plan. This recipe is a modification we’ve liked best from one of the meals in the plan.
1 6-inch whole grain tortilla
3 ounces grilled chicken breast (works great with leftover chicken), cut into strips
Bell Pepper, Sliced
1 tablespoon reduced-fat Ranch dressing
1/3 avocado, sliced
Fill tortilla with all ingredients (we enjoy heating the chicken before placing in tortilla). Enjoy!
