Chili Sauce

Today’s recipe is from Debbie Garbutt. Here’s what she says about her Chili Sauce: “It is a delicious relish that has become a favorite of my husband, especially served with meat. My mom and I make it together at least once a year. She uses small jars and gives them away as hostess gifts.” Looks so delicious! Thanks for sharing!

8 lb. (1 peck) tomatoes (or 5 – 28oz. cans of diced tomatoes)
1 small bunch celery, chopped
4 medium onions,chopped
3 green peppers, chopped

If using fresh tomatoes, scald, skin, and chop them. Cook tomatoes for 15 minutes, and discard 1/2 of the juice. (If using canned tomatoes, combine all vegetables and do not discard any juice.) Add remaining vegetables and simmer for 1 1/2 hours. Then add the following

2 teaspoons cinnamon
3/4 teaspoon cloves
1 tablespoon dry mustard
1/4 cup salt
1 quart cider vinegar
2 pounds light brown sugar

Cook all ingredients together for another 1 1/2 hours. Seal in hot jars. Makes about 8 pints.
