Chocolate Macaroons

I found this really good, and not too bad for you, cookie recipe this past week from Bob’s Red Mill. Hope you enjoy them.

2 egg whites
1/2 teaspoon salt
1/2 cup sugar (or Splenda)
1/4 teaspoon almond extract
1 cup finely ground coconut (either use Macaroon coconut or grind regular coconut flakes in a blender)
1 cup semi-sweet chocolate chips, melted and cooled

Preheat oven to 325 degrees. Beat egg whites and salt until almost stiff. Add sugar slowly, beating until egg whites stand in peaks. Add flavoring. Fold in coconut. Add melted chocolate
and stir until well mixed. Drop by teaspoonfuls on waxed paper on a cookie sheet and bake for 12-15 minutes. Cool slightly and remove from paper with a spatula.
