Citrus Salsa

Citrus SalsaThis week, I have another recipe I tried out in my temporary little Memphis, TN apartment. I really enjoyed this Citrus Salsa and enjoyed it with some reduced-fat crackers I had. I had to make myself stop or I would have eaten the whole making! It was great!

4 Roma tomatoes
2 large oranges, peeled and diced
1 large Vidalia onion, peeled and chopped
2 jalapeno peppers, seeded and minced
2 tablespoons lemon juice
1/4 cup orange juice
3 teaspoons Splenda
1 tablespoon fresh cilantro
1 teaspoon salt

Bring small saucepan of water to a boil. Blanch tomatoes for 30 seconds, then rinse with cold water. Peel and chop tomatoes.
Place all ingredients in a large bowl and mix thoroughly. Allow to stand at room temperature for 1 hour. Mix and serve. Refrigerate any unused salsa.

Serves 5 – Per serving: 70 calories, 0 grams fat, 2 grams protein, 16 grams carbohydrate, 3 grams fiber
