Crab & Spinach Tilapia

Try this fairly easy but fancy recipe for your next dinner party (or tonight’s supper)!

¼ cup parsley, chopped
1 ½ teaspoons hot sauce
½ teaspoon salt
4 eggs
¾ cup fat free mayonnaise
½ cup fat free sour cream
¼ cup Dijon mustard
2 tablespoons cider vinegar
¼ teaspoon celery salt
¼ teaspoon dry mustard
½ teaspoon black pepper
1/16 teaspoon cayenne pepper
10 ounce package frozen spinach, thawed & dried well
¼ cup bread crumbs
1 tablespoon dill, dried
2 (5 ounce) cans crab meat
½ cup reduced fat cracker crumbs (I use Ritz)
12 fish filets (I use Tilapia)
Olive Oil

Preheat oven to 375 degrees.

Mix together all ingredients except fish and oil, folding in crab and crackers last.
Carefully slice fish filets in half, butterflying filets. Spread mixture in center of each fish filet and place in a baking dish. Bake for about 25-30 minutes at 375 degrees until fish is flaky.

Can:
– Substitute whole fish or a different type of fish filet
– Use Old Bay Seasoning and leave out the celery salt, dry mustard, black pepper, and cayenne pepper
– Instead of butterflying fish filets, Spread mixture in bottom of pan and nestle whole filets in mixture. May take longer to cook fish.
