It seems that the Holiday Specials newsletter has been a great success – Thanks to those of you who have sent and who are still sending me recipes, tips, and memories. I would like to continue using some of the recipes (especially those that are a little healthier) in my regular newsletter while also sending the special newsletter each Friday.
Today’s recipe is from a friend of mine, Michasia Gullett (also known as Mimi). Michasia was on my volleyball team this past year and is originally from Poland. Here’s what she says about her Grandma Gullett’s Cranberry Salad:

From: Grandma Gullett
24 ounces ground Cranberries
2 cups ground Apples (2 to 3 good-sized Granny Smiths)
1 pound marshmallows – small type
2 cups sugar
Nuts if wanted
1 cup of whipped cream
Stir first 4 ingredients together. Let stand overnight.
Top with nuts & whipped cream.
Note: to make this recipe a little lighter, try substituting Splenda for the sugar and light whipped topping for the whipped cream.
