Crockpot Mexican Carnitas

Thanks to $5 Dinners for today’s delicious recipe (I modified it just a bit from their version). She claims she can make this entire dish for less than $5! Enjoy your budget friendly dinner!

1 1/2 pounds pork tenderloin (can use shoulder or loin but tenderloin generally has less fat on it), cubed
1 tablespoon olive oil
1 teaspoon ground cumin
Salt & Pepper to taste
2 garlic cloves, minced
1/4 cup lime juice
1/4 cup water

8 corn tortillas
Salsa, diced avocado, light sour cream to garnish

Mix together pork cubes, oil, and cumin. Season with a few dashes of salt and pepper. Place in slow cooker. Add garlic, lime juice, and water. Cook on low for 8 hours. Remove, allow to cool slightly, and shred with 2 forks.

Spoon meat over toasted corn tortillas and top with salsa, avocado, and light sour cream.
