Diet Coke Float Cake

It never fails that last minute I’m asked to bring a cake to an event and the only thing I have on hand are a regular cake mix. Here’s a simple and easy way to make a delicious cake that’s not too unhealthy! Also, below are more ideas for making a cake mix just a little “better!” Please send more healthy cake tips if you have any!

Cake:
1 box French Vanilla cake mix (can use reduced fat or sugar free cake mix)
1 cup diet coke
1/4 cup cocoa powder
1/2 stick light butter, melted
2 eggs (or 3 egg whites)
1 teaspoon vanilla extract

Glaze:
1/4 cup diet coke
1/2 cup reduced fat (or whipped, or reduced sugar) chocolate icing

Combine cake ingredients in a large mixing bowl; beat mixture at low speed with an electric mixture for about 30 seconds. Use a spatula to scrape down sides of bowl, if needed. Beat at medium speed for about 2 minutes.
Pour batter into bundt pan and bake at 350 degrees for about 35 minutes or until toothpick inserted in center comes out clean. Cool cake about 15 minutes in pan on wire rack. Pierce top of cake with a skewer or fork (I use a meat fork).
To prepare glaze, bring diet coke to a boil, stir in icing, and stir over heat until melted. Pour icing over pierced cake.
Can serve with fat-free vanilla ice cream.

Ways to make a “better” cake:
– Mix a chocolate cake mix with a box of prepared sugar-free chocolate pudding (do the same for strawberry or vanilla cakes)
– Instead of using oil, substitute applesauce (same as oil amount) or butterbuds (3 tbsp liquid butterbuds)
– Instead of using eggs, substitute egg beaters or egg whites
