Ellen’s Cauliflower

Last night I was making dinner and happed upon this delicious recipe. I’m always looking for good ways to cook cauliflower (as I’m not the biggest cauliflower fan) and so, in an attempt to make a healthy side dish (not loaded with cheese, butter, etc), I began experimenting. I came up with this delicious recipe! Hope you enjoy as much as we did!

1 head cauliflower, cleaned and cut into florets
4 artichoke hearts, minced
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt

Boil cauliflower in water in saucepan until tender. Drain. Place in bowl. Add artichoke hearts, garlic powder, pepper, and salt. Season additionally to taste as needed.

Serve warm.
