Ever-Ready Bran Muffins

15 ounce package Raisin Bran
5 cups all-purpose flour
3 cups sugar
5 tsp soda
2 tsp salt
4 eggs, beaten
4 cups low-fat buttermilk
1 cup vegetable oil

Combine first 5 ingredients in a large bowl. Make a well in center of mixture. Add eggs, buttermilk, and oil; stir just enough to moisten dry ingredients. Cover and store in the refrigerator for up to 4 weeks (I like to store mine in quart jars).
When ready to bake, fill greased muffin tins 2/3 full. Bake at 400 degrees for 12-15 minutes.

Yield: 5 1/2 dozen muffins – Nutrition Info (per muffin): 130 calories, 2.5 grams protein, 22 grams carbohydrate, 1 gram fiber, 4 grams fat, 3.5 grams unsaturated fat
