So much easier to serve than one big cheeseball, this past week I made these mini cheeseballs and they were a huge success. Creating individual cheeseballs allowed for quicker service and wonderful presentation. I topped mine with nuts, parsley, or cayenne pepper to give a colorful Christmas presentation.
2 packages (8 ounces each) lite cream cheese
2 cups shredded sharp cheddar cheese
1 teaspoon garlic powder
1 small can green chilies
4 ounce jar sun-dried tomatoes, drained and chopped
Dash red pepper
Toppings: Chopped pecans, red pepper, parsley, etc
Crackers to serve
Beat together cream cheese and cheddar cheese. Add garlic powder, green chilies, sun-dried tomatoes, and red pepper. Beat until thoroughly combined.
Shape into individual balls (about 24 1-inch balls), top with or roll in toppings of choice. Place on serving platter and refrigerate until ready to serve.
