My mom made this wonderful casserole for us to enjoy for breakfast the morning after Christmas when my grandparents were at our house. Hope you enjoy!
1 (10-ounce) loaf sliced French bread or Texas Toast
8 large eggs (or 4 eggs and 8 egg whites)
3 cups milk
6 tablespoons sugar or Splenda
3/4 teaspoon salt
1 teaspoon vanilla
6 tablespoons light butter
Cinnamon to taste
Arrange bread slices in a well-buttered 9 X 13-inch baking dish. Combine the next 5 ingredients in a bowl and mix well. Pour over bread so each slice is saturated. Chill covered for 4 to 36 hours. Prior to baking, dot the bread with margarine and sprinkle with cinnamon to taste. Place dish in cold oven and bake at 350 degrees for 30 minutes.
Serve with light syrup.
Serves: About 24, depending on the serving size
