Green Eggs & Ham

One important part of being healthy is to try new foods. The Dr. Seuss book “Green Eggs & Ham” is one of the first food-related books I remember reading, so when I came across this recipe I thought I must just TRY it. Turns out, I really liked it! So, “Try them! Try them! And you may. Try them and you may, I say.”

3 eggs
1 tablespoon all-purpose flour
2 tablespoons butter, melted
1 cup reduced-fat cottage cheese
1 ½ cups reduced fat shredded sharp cheddar cheese
1/8 teaspoon hot pepper sauce, or to taste
1 cup spinach leaves, loosely packed
8 thin slices ham

Preheat oven to 350 degrees. Grease 8 large muffin tins (or 4-ounce ramekins).
Combine eggs, flour, butter, cottage cheese, cheddar cheese, and hot sauce in a food processor or blender. Process until well blended. Add spinach and pulse briefly. Do not over-process. Green flecks should be visible.
Line muffin tins with ham slices, pressing down with fingertips. Pour about 1/3 cup egg mixture into each tin.
Bake 20-25 minutes, or until a wooden toothpick inserted inn the center comes out clean. Serves 8.

    We like them, We like them, I say!
    Steve and Hannah would not eat them in a house, would not eat them with a mouse, until they tried them and then they would eat them anywhere!
    I used 8 oz ramikans, it made 4 servings. They were great!
    Thanks for the idea.
