We know that salmon and other fatty fish carry many health benefits so Ryan and I are working towards trying to have fish as often as possible. I found some salmon the other day and decided to try out this quick and easy recipe. The fish was absolutely delicious and we enjoyed it both by itself for dinner and on a salad for supper. I used our little indoor grill (the faux George Forman I have!) to cook mine on.
1 pound salmon fillets
Lemon pepper to taste
garlic powder to taste
salt to taste
1/4 cup low-sodium soy sauce
1/4 cup raw cane sugar (or turbinado sugar)
1/4 cup water
2 tablespoons olive oil
Season salmon fillets with lemon pepper, garlic powder, and salt. Rub seasoning into filets.
In a shallow bowl (preferably with a lid), stir together soy sauce, sugar, water, and olive oil. Place fish in marinade and turn a couple of times to cover fish with marinade.
Refrigerate for at least 2 hours.
Preheat grill to medium heat. Lightly oil and place salmon on grill, discarding marinade. Cook salmon for about 6-8 minutes per side or until fish flakes easily with a fork.
