Honey Banana Bread

The other day, a friend of mine talked about making banana bread with honey so I thought I’d try it out myself. This recipe was absolutely delicious and made entirely with honey as the sweetener. It was very good made with half whole wheat flour as well.

1/2 stick light butter, softened
1 egg
1 cup honey
3 ripe bananas, mashed
1 cup all-purpose flour
1 cup whole wheat flour
3 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped pecans, optional

With a mixer, beat together the butter, egg, honey, and banana. Mix in flours, baking powder, baking soda, and salt and stir until moistened. Fold in pecans if using.

Pour into greased loaf pan and bake at 350 degrees for 25 minutes. Reduce oven to 300 and bake an additional 30 minutes or until a toothpick inserted into loaf comes out clean and top is brown.
