How To “Cut In” Ingredients

To “cut in” generally means that you will “cut” some sort of fat, generally shortening or butter, into your dry ingredients (i.e. flour, sugar, baking soda/powder, etc). You can use a couple of methods to “cut in” these ingredients:

– Pastry Blender – A Pastry Blender, as shown here, works great to cut the solid into your dry ingredients. Just use the blender to literally “chop” the food up to crumbly consistency.
– 2 Knives – Cut solids into dry ingredients using 2 knives – simply cross the knives in opposite directions until you’ve “cut” all the solid up
