Microwave Toasted Pecans

Nuts offer healthy compounds and benefits, such as omega-3 fatty acids, antioxidants, vitamin E, calcium, magnesium, potassium, zinc, and fiber. Eating a small handful of nuts offers healthy fats and proteins.

2 cups pecans

3 tablespoons butter

1 teaspoon salt

Sort pecans to have similar size pieces. Use a 2 quart Pyrex measuring cup, and put pecans in cup, along with butter and salt. Microwave on high for 3 minutes and stir. This is where it gets tricky. Depending on the size of your pecan pieces, continue to cook for 1 minute intervals, stirring after each interval. Taste pecans each time to see if they are cooked through. Continue cooking until they “test’ done, which should take about 5-6 minutes. Larger pecans take longer. Watch them closely.

When they are ready, put them on paper towel and sprinkle with more salt. Do not leave them in the Pyrex cup, or they will burn.
