Apple-Yogurt Muffins

2 cups flour
1/2 cup sugar
1 Tbsp baking powder
1/2 tsp salt
1/4 tsp cinnamon
1 (8 oz) carton reduced-fat vanilla yogurt
1 egg
1/4 cup vegetable oil
2 Tbsp fat free milk
1 small Granny Smith apple, peeled and grated
1/3 cup raisins (optional)

Topping:
2 Tbsp flour
2 Tbsp sugar
1/2 tsp cinnamon
1 Tbsp butter

Mix together flour, sugar, baking powder, salt, and cinnamon. Add yogurt, egg, oil, and milk. Stir to moisten dry ingredients – do not overbeat. Add apple and raisins, if desired. Batter will be thick.
Divide batter evenly into 12 muffin tins, about 2/3 full each
Combine topping ingredients and sprinkle over muffins. Bake at 400 degrees for 20-24 minutes.
